Zucchini Lasagna Boats




Yield 4 halves


4 oz lean turkey meat

1 cup tomato sauce

1 tbsp italian seasoning

2 zucchinis

1/2 cup Ricotta cheese

1/3 cup shredded parmesan cheese


  1. Cut zucchinis in half (tall)
  2. Scoop out insides of zucchinis, leaving about 1/4"
  3. In a pan, brown meat and add tomato sauce
  4. Mix ricotta and italian seasoning in a bowl
  5. Spread ricotta mix into the zucchini boats
  6. Top zucchini boats with meat sauce
  7. Place in a baking pan and cover with foil
  8. Bake 25 minutes at 400 degrees
  9. Uncover and add parmesan cheese to top
  10. Bake uncovered for 5 minutes
