Let me just start by saying that if I had one last meal on this earth it would be a Cafe Rio sweet pork salad! I am obsessed with this salad! It is just delicious and makes my mouth water every time I order it! My family has made our own Cafe Rio copycat recipes a few times and this is the best ranch recipe I have tried. I actually got the recipe from my mother-in-law who makes it quite often for events that she helps with. I recently made it for a family dinner and everyone loved it!
It is also so easy to make! All you have to do is throw everything into a blender. I love those types of recipes!
- 1 cup mayo
- 3 tbsp dry Hidden Valley ranch dressing mix
- 1 cup sour cream
- 1/2 bunch fresh cilantro
- 1/2 tsp minced garlic
- juice of 1 lime
- 3 tomatillos husked and washed
- 1 cup salsa verde
- 1 tbsp sugar
- Place all ingredients in a blender or food processor and process until smooth.
You can use it on more than just salads. I also used it to dip cheese quesadillas in and it was so yummy! I hope the you enjoy this easy and delicious tomatillo ranch dressing Cafe Rio copycat recipe! It is the best!
