Hey Sistas! Enchilada night is a fav in our family and one of our go to meals. It is easy to throw together and oh so yummy. With enchiladas you can basically throw whatever you have on hand in them, wrap them up and poor your favorite enchilada sauce on top. Today we are bringing you a super easy enchilada recipe that the whole family will enjoy, including the cook!
- 1 Lb ground beef
- 1/4 C taco seasoning
- 3/4 C water
- 1 C corn
- 8-12 flour tortillas (depending on size of tortilla)
- 1 1/2 C shredded cheddar cheese
- 1 Can enchilada sauce
- Pre-heat oven to 325.
- Cook ground beef until done.
- Add in your taco seasoning and water then bring to boil. Once it boils let simmer for 5 minutes.
- Add your corn into meat mixture and stir until its heated through.
- Scoop meat mixture into tortillas, roll up and place in greased 9x13 pan.
- Once all the tortillas are in the pan pour enchilada sauce on top and sprinkle with cheese.
- Bake for 25 minutes or until heated through.
I don’t have to many dishes that are my absolute favorite but this is one of them! I love eating these enchiladas and so does my family. I like serving them with sour cream and tortilla chips. Sometimes I also make a side of rice if we are really hungry.
Just talking about these makes me want to make these right this second! They will not disappoint and after a crazy busy day this will be the perfect meal to satisfy those hungry bellies you feed.
