Hey sistas! It’s Shari here and today I am bringing you another SIMPLE 5 ingredient dinner recipe. Thai yellow curry is one of my favorite things to eat! I love all of the flavors and the heat! Many curry recipes call for a ton of ingredients but as you know I like to keep my recipes SIMPLE and have narrowed it down to 5 ingredients. Not only is this recipe only 5 ingredients but I also made it in my slow cooker! This 5 Ingredient Slow Cooker Thai Yellow Curry is delicious and you are going to love how easy it is to make by yourself. I first tried curry in college when I was a visiting student for a spring term at BYU Hawaii. Once I had it I was hooked! Whenever I go to a Thai restaurant I don’t even look at the menu because I only want yellow curry.
If you want to add more vegetables to this dish, I would recommend carrots and onions. I use and recommend Mae Ploy Thai Yellow Curry Paste. Here is the simple 5 ingredient recipe:
- 2-3 chicken breasts cut into 1-inch cubes
- 4 large golden yukon potatoes cut into 2-inch cubes
- 1/3 cup Mae Ploy yellow curry paste (link above)
- 13.5 fl oz can of coconut milk
- 1 cup chicken broth
- Place the cubes potatoes and chicken into your slow cooker
- In a large mixing bowl, combing the curry paste, coconut milk, and chicken broth and stir until curry paste is completely mixed in
- Pour mixture over the potatoes and chicken
- Cook on low for 3-4 hours or until potatoes and chicken are completely cooked
- Serve over rice
- If you want to add more vegetables I recommend carrots and onions
You are going to love the combination of garlic, lemongrass, cumin, and other spices that are in the Mae Ploy curry paste. It is spicy enough to have a little kick but it doesn’t burn my mouth.
