We all know that during the school year, the mornings can be hectic and rushed. Here is a meal that you can easily cook the night before, heat up in the morning, and the kiddos can eat them in a hurry. Enjoy!
Breakfast Quiche Muffins

Ingredients
- 9 eggs
- 1 bag Baby Spinach
- 1 onion
- 1 tblsp oil
- 1 c cheddar cheese
- salt & pepper for taste
Instructions
- Grease the muffin cups in the pan - make sure to get the bottom and the sides
- Chop onions. In a separate pan, saute the onions in a pan with the oil
- In a bowl, beat the eggs. Add salt and pepper to taste
- Add 3 or 4 leaves of spinach to each muffin cup
- Add about a teaspoon of sautéed onions to each muffin cup
- Add about 1 tablespoon of cheese to each muffin cup
- Add the egg mixture to each muffin cup. Cups should be about 2/3 full
- Bake at 375 degrees for 10-20 minutes
