Back to School Grab & Go Breakfast: Easy Quiche Muffins

We all know that during the school year, the mornings can be hectic and rushed. Here is a meal that you can easily cook the night before, heat up in the morning, and the kiddos can eat them in a hurry. Enjoy!IMG_0018

Breakfast Quiche Muffins

Ingredients
  1. 9 eggs
  2. 1 bag Baby Spinach
  3. 1 onion
  4. 1 tblsp oil
  5. 1 c cheddar cheese
  6. salt & pepper for taste
Instructions
  1. Grease the muffin cups in the pan - make sure to get the bottom and the sides
  2. Chop onions. In a separate pan, saute the onions in a pan with the oil
  3. In a bowl, beat the eggs. Add salt and pepper to taste
  4. Add 3 or 4 leaves of spinach to each muffin cup
  5. Add about a teaspoon of sautéed onions to each muffin cup
  6. Add about 1 tablespoon of cheese to each muffin cup
  7. Add the egg mixture to each muffin cup. Cups should be about 2/3 full
  8. Bake at 375 degrees for 10-20 minutes
