Banana bread, YUM!! I love quick breads. There’re easy to make and they are so delicious. I sometimes don’t have the patience to wait for my bread to rise so making quick breads is perfect for me. I love this banana bread recipe.  It isn’t a healthy one though but at least it has bananas in it. hehe 

Banana bread is also something I use for a quick gift to my neighbors or my friends. I like to make mini loafs so my batter goes further and it cooks quicker.  You can also double the recipe if your wanting to make more at once.

Ingredients
  1. 1/2 C butter softened
  2. 1 1/4 C brown sugar
  3. 2 eggs
  4. 1/2 cup sour cream
  5. 3-4 mashed bananas
  6. 1 tsp vanilla
  7. 2 tsp cinnamon
  8. 1 1/2 c flour
  9. 1/8 tsp nutmeg
  10. 1 tsp baking soda
  11. pinch of salt
  12. 3/4 c chocolate chips
Instructions
  1. Preheat oven to 350.
  2. In mixer cream together butter and 3/4 cup brown sugar until blended.
  3. Mix in eggs, sour cream, bananas and vanilla until well combined.
  4. Add 1 tsp of cinnamon, nutmeg, flour, baking soda, and salt.
  5. Add chocolate chips.
  6. Grease 3 mini loafs and add batter until 3/4 way full.
  7. Combine left over brown sugar and cinnamon in a bowl and sprinkle over loaves.
  8. Bake bread for 25 minutes.
  9. Then using tin foil tent each loaf so that the top does not burn.
  10. Bake for another 25 minutes or until a toothpick comes out clean.
Notes
  1. Dont overmix batter or else your bread will come out more dry.

This banana bread is so moist and yummy. Of course I added chocolate chips because they make everything taste better. My family devoured them and I had to hide half a loaf so I could save some for later. Does anyone else hide food from their family? haha gotta love them! 

If you are wanting a healthier banana bread you can always substitute the sour cream for plain greek yogurt. You can also substitute the butter with apple sauce. These things might change the flavor though.
