Cornbread and Fall go hand in hand in my book! When Kai and I were up in Utah for college we would always have dinner at one of his aunts house. Her mom made the best cornbread ever and I finally asked for the recipe. With great delight I found out that it was made from a box mix but just dressed up a bit! Now that’s my kind of cornbread!
This is the best and easiest cornbread recipe. I usually grab the big bag of Marie Callender’s cornbread mix at Costco during the Fall so that I can always have it on hand. I start with that as my base for this cornbread. Then I add an egg and some sugar. Pretty simple! You can always add things if you want though. Some people love it with some actual corn in it or some green chillies. The best part about this cornbread is what I put on it after it’s done baking.
I melt together some honey and butter and pour it on top of it after it’s done cooking. Sometimes when I am not to concerned with how my bread looks I will poke some holes in it so the butter and honey seep down into the bread. But when I am usually serving it for guest I just pour it all over the top. Once it’s finished cooling I cut it into pieces and serve with some butter. Ahh its so delicious, it just melts in your mouth. Just talking about it makes me want to whip up another batch right now!

- 3 C Marie Callender's Corn Bread Mix
- 1 1/2 C Water
- 1 Egg
- 1/8 C Sugar
- 1/4 C Butter
- 1/2 C Honey

Pre-heat oven to 375 and spray 8x8 pan with cooking spray.

Stir together corn bread mix and water until combined.

Add in egg and mix well. Mix in sugar.

Pour in greased pan and bake for 30-35 minutes, until toothpick comes out clean.

Melt butter and honey together and pour over bread.

Cool and serve.
