Hey sistas,

Hope everyone is having a fabulous week! It has been majorly hot in Las Vegas recently with temperatures up to 114 degrees! On Saturday, I was out running errands all day in my black car. I might as well have been cooking inside of an oven haha.  You better believe I could not wait to come home to whip up these Brownie Ice Cream Sandwich Pops!

When I was grocery shopping at Walmart that day, I saw the cute, NEW Blue Bunny® packaging! It is fun, clear, and you can see all of the different the flavor whirls. I definitely purchased a couple tubs of ice cream, because what better way to beat the heat, than with a delicious ice cream recipe?! I did not need the Blue Bunny® Super Fudge Brownie® or the Blue Bunny® Peanut Butter Party for my recipe, but I bought them anyways! I blame it on my sweet tooth 🙂

And they are super easy to find at Walmart! All you have to do is go to the frozen food section and look in the ice cream aisle. I took a picture of exactly what it will look like in the store.

blue bunny ice cream Here is the recipe card and a photo of the ingredients. I also bought Smucker’s Magic Shell Chocolate Flavored Topping because I think that it is such a great and inexpensive way to add some fun to your summer ice cream!

Brownie Ice Cream Sandwich Pops

Ingredients
  1. Blue Bunny® Homemade Vanilla
  2. Smucker's Magic Shell Chocolate Flavored Topping
  3. 8 tbsp butter (1 stick)
  4. 1/8 cup water
  5. 1 box brownie mix
  6. 2 eggs
Instructions
  1. Preheat oven to 350 degrees
  2. Melt butter in a small bowl
  3. Combine melted butter, eggs, water, and brownie mix in a mixing bowl. Beat until smooth.
  4. Line both 9"x9" baking pans with nonstick foil
  5. Spread half of mix into one pan, other half of mix into other pan
  6. Bake 20-25 min or until toothpick can come out clean
  7. Let cool
  8. Add about 1.5 inches (height) of ice cream to one pan and smooth it out so that it is leveled
  9. Top with other large brownie square
  10. Freeze for at least 4 hours
  11. Cut into small square pieces
  12. Add popsicle sticks to each individual pop
  13. Dip pop in Smucker's Magic Shell Chocolate Flavored Topping
Notes
  1. You will need two 9"x9" baking pans and popsicle sticks.
