The famous Mint Oreo Ice Cream Cake! This is a family favorite recipe that has been in my husbands family for years. I had to learn how to make this when I married my husband. This is the cake he has always eaten for his birthday so I took on the reins when I married him and am sure glad I did! And not just for the cake hehe.
This ice cream cake is our favorite ice cream cake! It is delicious and everyone always ask me for the recipe when I bring it to share. My favorite part about this cake is just how easy it is to make. It has only three ingredients. Mint Ice Cream, Oreos, and Extra creamy cool whip.
Kai my husband dosent love regular cake but he sure does love ice cream. Speaking of ice cream, do you like your ice cream soft and melty or more firm and frozen? When Kai and I were first married we brought some ice cream home from the store. The next thing I new the tub of ice cream was in the microwave and Kai was melting it! I almost had conniption! I like mine firm and frozen not melted hehe we now have learned that I get my ice cream first.
For this mint Oreo ice cream cake you did need your ice cream melted a bit though before you make your cake. I am okay with that because you stick it back in the freezer to firm it up again. First you pull out a 1.75 qt of of mint ice cream, your favorite flavor of mint. You let that sit until it’s soft. Then you take your Oreos, you can use regular or double stuffed. I am usually a double stuffed girl but for this cake I use normal because you get more of the chocolate cookie part in the regular pack. Place your cookies in a ziplock pack with cream still in it and everything and crush them up into chunk size pieces. Take a large bowl and dump your ice cream, Oreos and extra creamy cool whip into your bowl. If you cant find extra creamy cool whip then normal is fine. Mix it all together until its combined then you pour it into a 9×13 inch dish. My favorite ones you can find here. They are glass and come with covers. Cover and freeze until firm again. I like to take mine out a little bit before serving so that I am able to cut it into pieces.
- 1 1.75 pint Mint Ice Cream
- 1 package Oreo Cookies
- 1 8oz Extra Creamy Cool Whip

Pull out ice cream from freezer and let it thaw until soft.

Place oreos in ziplock bag and crush into chunks.

In a mixing bowl mix together ice cream, cookies, and cool whip until combined.

Pour into a 9x13 inch pan and place back into freezer for a couple hours or overnight to firm back up.

Take out of freezer a few minutes early so that you can cut it into pieces.
