Honey Chipotle Glazed Salmon with Tomato and Spinach Quinoa

I love salmon because it is so versatile.  There are so many ways to prepare it.  It is also very healthy for you.  It is a great source of protein, vitamin B12, and vitamin D.  My favorite dish at BJ’s restaurant is the cherry chipotle glazed salmon.  That is what gave me the inspiration for this dish.  I love the union of the sweet and spicy flavors! 

For those of you who like a little kick of spice in your food, you will absolutely love this honey chipotle glazed salmon recipe!  The combination of the sweet honey with the spicy chipotle chiles will make your mouth water!  It’s actually a pretty easy recipe and will not take you very long at all to make!

Combine all of the glaze ingredients in a bowl and mix.  Cut your salmon into about 2 inch wide fillets.  Brush the glaze on top of the salmon and bake at 450 degrees for 15-20 minutes.

Bring chicken broth to a boil in saucepan and add quinoa.  Bring quinoa to a boil, cover, reduce heat to low and simmer for 15 minutes.  Heat olive oil in skillet over medium heat and add spinach and garlic.  Cover and cook for about 5 minutes or until spinach is cooked.  Combine chopped tomatoes, spinach, and quinoa in bowl.

Ingredients
  1. 1 lb. salmon cut into 2-inch wide fillets
For the glaze
  1. 1-2 tbsp chipotle chiles in adobo sauce (depending on your heat level)
  2. 1/4 cup honey
  3. 1/2 tsp garlic powder
  4. 1/2 tsp onion powder
  5. 1/2 tsp paprika
  6. 1/2 tsp salt
For the Quinoa
  1. 2 cups chicken broth
  2. 1 cup quinoa
  3. 1 chopped roma tomato
  4. 1 cup fresh spinach
  5. 1/8 tsp garlic powder (or 1/2 tsp minced garlic)
  6. 1 tbsp olive oil
For salmon
  1. Heat oven to 450 degrees
  2. Combine all of the glaze ingredients in a bowl and mix
  3. Brush glaze on the top of the salmon
  4. Bake for 15-20 minutes

    What a great superfood meal! I love all the ingredients here and I love the spicy-sweet glaze you’ve got for the salmon – right up my alley! And you can’t go wrong with a good spinach-quinoa salad to serve with it. Yum!
