As you guys know my name is Patti! So when it comes to St. Patricks day I feel like we have a special bond! I usually call it St. Patti’s Day. I also have a lot of Irish in my blood, which my husband can attest to sometimes hehe. So this is a fun holiday to us. To make it more festive I like to whip us these Leprechaun Muddy Buddies.
We love muddy buddies in our house so I put a little twist on it and added mint to it. So if your a mint fan like us, you will love this yummy treat.
What I did was instead of peanut butter and butter I just used Andes chocolate baking chips and normal semi sweet chocolate chips. I melted them together, mixed in the Chex cereal (which we always have in stock at our house.) I then coated it with powdered sugar. The special treat that I love adding to these Leprechaun Muddy Buddies is thin mint cookies! Ahh it makes it so good, I just love thin mint cookies. You can either brake them in your hand or cut them up with a knife but I like to keep them chunky. Once done I usually sprinkle a little more Andes mints on top for a little something.
- 1 1/2 C Andes Mint Baking Chip
- 1 1/2 C Semi sweet chocolate chips
- 9 C Chex cereal
- 3 C Powdered Sugar
- 1 sleeve Thin Mint Cookies about 22 cookies

Melt both chocolates together until smooth.

Poor over you Chex Cereal and stir until all cereal is coated.

Place coated cereal in a 2 gallon zip lock bag or split it up into 2, 1 gallon zip lock bags. Pour powder sugar in bag. Zip it up and shake around until powdered sugar coats all cereal.

Place in bowl and stir in chopped thin mint cookies. You can either break them apart with your hands or chop them but I leave them chunky.

Sprinkle Andes baking chips over the top.
