The new year is just a couple days away, yay! But that also means its back to the grind and busy schedule of life. School is staring back up again. No more days off of work. And everything thing is in motion again. Today we’re showing you how to make mini pancake muffins. It is an easy and quick breakfast that can either be a sit down or a quick grab and go kind of meal.
Mini Pancake Muffins

Ingredients
- Instant pancake mix
- Water
- Chocolate chips or blueberries
Instructions
- Preheat oven to 350 degrees.
- Mix Instant pancake mix with water.
- Pour into greased mini muffin tin about 3/4 the way full.
- Place chocolate chips or blueberries on top and press them in a bit.
- Bake for about 10-12 minutes or until cooked through.
