Mini Pancake Muffins

The new year is just a couple days away, yay! But that also means its back to the grind and busy schedule of life.  School is staring back up again. No more days off of work. And everything thing is in motion again. Today we’re showing you how to make mini pancake muffins. It is an easy and quick breakfast that can either be a sit down or a quick grab and go kind of meal.

Ingredients
  1. Instant pancake mix
  2. Water
  3. Chocolate chips or blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix Instant pancake mix with water.
  3. Pour into greased mini muffin tin about 3/4 the way full.
  4. Place chocolate chips or blueberries on top and press them in a bit.
  5. Bake for about 10-12 minutes or until cooked through.

 These mini pancake muffins are so easy to make! My son loved them because they were small and he could hold them in his hand. I did half the muffins with blue berries and half with chocolate chips. You can either grab them and eat them while on the run or you can sit down and eat it like a regular pancake with syrup. Either way they taste just like a pancake and are super yummy. What I also really enjoy is that they are freezable so if you make a bunch at one time you don’t have to eat them every day for breakfast for a week. You can pull them out sporadically and eat them when you would like.
