One pan tortilla skillet: easy, simple, one pot, mexican dish

Hey Sistas, I am back to give you guys another easy and simple but delicious recipe. We eat a lot of Mexican food in our house. We love it and I feel like there are so many yummy dishes that you can make that fall into that category. Including this super easy one pan tortilla skillet. This meal is so fast to make but so good. You just throw everything into that pan and it is done. I always feel like its a score when everyone in our family likes it especially our two year old.

Here is the simple recipe:

Ingredients
  1. 3 Tbls Butter
  2. 3 Tbls Flour
  3. 2 C chicken broth
  4. 1/4 tsp cumin
  5. 1/2 tsp salt
  6. 1/4 tsp oregano
  7. 1 Can black beans
  8. 1 lb of shredded cooked chicken
  9. 1 C sour cream
  10. 6 flour tortillas cut into 1 inch squares.
  11. 1 cup cheddar cheese
Instructions
  1. Melt butter in pan and add in flour.
  2. Stir in chicken broth and mix for about 3 minutes until well combined and thickened.
  3. Mix in cumin, salt, oregano, black beans and chicken.
  4. Reduce heat to low and cover, let simmer for about 10-15 minutes or until heated through.
  5. Stir in sour cream and flour tortilla squares.
  6. Top with cheese and cover until heated through and the cheese is melted.

 So simple right? A lot of the times I just use canned chicken too if I don’t feel like cooking up chicken. This is one of our go to meals because it is so easy and so delicious. It is cheesy, creamy, and has a lot of flavor.

My favorite part  about it is that your done with the meal after making this. Sometimes with Mexican food I feel like there are so many topping and things you have to prepare in addition to the main meal. With this dish your finished as soon as this is. Enjoy.
