Hey Sistas! I hope your spring is going wonderful and your having great weather wherever you are. One of the things I love best about the spring and summer is the food that comes with it. For Easter this year I was trying to think of a dessert to make. I wanted it to be a lighter dessert since I tend to usually make something involving chocolate and peanut butter hehe. Strawberries sounded good but I didn’t really feel like actual strawberry shortcake. I remembered trying a butter cake a little while back and came up with the idea of using that instead of shortcake. So it’s like strawberry shortcake but it’s strawberry butter cake!
- 3 cups all purpose flour
- 2 cups sugar
- 1 cup butter (softened)
- 1 cup buttermilk
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 tsp vanilla
- 4 eggs
- 3/4 cup sugar
- 1/3 cup butter
- 2 tsp vanilla
- 3 tbsp water
- 2 quarts strawberries washed and sliced
- 1/4 cup sugar.
- 16 oz cool whip
- Place sliced strawberries in a bowl and mix in your sugar. Set in fridge so it has time to marinate.
- Preheat the oven to 325°F
- Grease really well a large bundt cake pan and dust with flour, set aside.
- In a standard mixer cream together butter and sugar. Then add the rest of ingredients, beat for about another 2 minutes.
- Pour batter into greased bundt pan and bake for 60-70 minutes or until a toothpick inserted into the cake comes out clean. Let cool while your making the glaze.
- For the glaze, combine all ingredients in saucepan and cook over medium-low heat. Stir continuously until the butter is melted and the sugar is dissolved. Do not bring to a boil. Poke holes over the cake using a fork or a knife and pour the glaze evenly on the cake while still in the pan.
- Allow the cake to cool completely in the pan, once cool flip pan upside down on your serving dish. Top with strawberries and place cool whip in the center.
This cake was so darn good. My family made it 3 times in a row just because it was that amazing. It is super moist but still a pretty light and airy dessert. It’s perfect for a spring and summer get together. It feeds quite a bit of people and it will be a hit.
