Hey lovelies! I am so excited to share ‘The Best Ever Raspberry Freezer Jam’ recipe with you. I have made freezer jams throughout out my life and it’s so yummy but my Sister-in-Law just told me the best secret ingredient which makes this raspberry jam the best ever!
We were up in Washington a couple of weeks ago and went out to my brother in laws parents house to pick berries. Their back yard is magical. Filled with raspberries, blueberries, strawberries, apple trees, grapes, corn and so much more! The boys had so much fun picking berries with their Grandma! When we got back home they had some more fun helping me make this freezer jam.
This freezer jam is perfect for toast or a peanut butter and jam sandwich as well as pancakes or french toast! It is sweet but not too sweet and it is so delicious.
So what the special ingredient is that my sister in law told me about is that instead of using water with the pectin you use berry juice with it! So genius right! I totally wanted to try it out and I loved the turn out. You need quite a bit of extra raspberries. You take a cheesecloth found here and squeeze the berries in it until juice comes out. If you don’t have enough juice for 3/4 cup you can always do half water half raspberry juice.
Best Ever Raspberry Freezer Jam
Ingredients
3 C crushed raspberries
5 1/4 C sugar
3/4 raspberry juice
1 box Sure Jell fruit pectin
extra raspberries for raspberry juice
Instructions
Crush 3 cups of raspberries and place in bow.
Stir in sugar and let stand for 10 minutes.
With a cheesecloth in a separate bowl squeeze extra raspberries to make raspberry juice.
Follow the directions on the Sure Jell box to make the pectin but just substitute the water for the juice.
Once done pour into fruit mixture and mix for 3 minutes.
Fill clean mason jars leaving 1/2 inch from the top.
Seal with lids and let sit for 24 hours at room temperature.
Then you can go ahead and stick it in the freezer or eat right away.
