Fall is on its way! And let me tell you, I cant wait for it to start cooling down. Fall is my favorite season. The colors, the cool crisp air, and all the fun festivities that go along with Fall make it my favorite. I bake a lot during Fall. Something about have fresh baked goodies on a cool Fall day makes my heart happy. Today I am sharing the perfect Fall treat to make your home inviting and smelling delicious. Chewy Chocolate Chip Oatmeal Bars are warm, gooey, and so chocolatey.
I love oatmeal chocolate chip cookies so I decided to make them into bars. I think I love these more than oatmeal chocolate chip cookies now! These Chewy Chocolate Chip Oatmeal Bars are thick and moist. They stay moist too because of the oatmeal in them. Something about oatmeal in the Fall just seems right. This is a comfort treat that will have your aromas in the kitchen on point.
When making these Chewy Chocolate Chip Oatmeal Bars you want to make sure that you don’t over bake them. Oatmeal desserts are sometimes hard to judge when they are done because you don’t want them to be not cooked all the way but if you wait too long then they will be to hard once cooling down. I pull these out when they look slightly undercooked. That way when they are done cooling off they set perfectly and are moist and chewy. You probably will need a big glass of cold milk to go along with these. They are so delicious!
CHEWY CHOCOLATE CHIP OATMEAL BARS RECIPE

- 1 C Butter
- 1 1/4 C Brown sugar
- 1/4 C sugar
- 2 eggs
- 2 tsp vanilla
- 2 1/2 C Old fashion oats
- 2 C Flour
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1 tsp Salt
- 2 C Chocolate Chips

Preheat oven to 350 degrees.

In a separate bowl combine oats, flour, baking powder, baking soda, and salt.

In a mixer cream butter and sugars together until smooth.

Add in eggs one at a time and then add vanilla.

Add dry ingredients into the wet ingredients. Mix until combined.

Fold in your chocolate chips.

Pour batter into a greased 9x13 pan and bake in oven 20-25 minutes. Do not over cook.

Let cool completely and serve.
