Sometimes, I find myself in a rut for breakfast. I’m so busy trying to get myself and the boys ready for the day that a lot of the times we just eat the same old thing for breakfast. My morning meal could use a little imagination. That is why I decided to take my favorite nacho recipe and reimagine the ingredients into Loaded Bacon and Tater Tot Breakfast Nachos so that it could be enjoyed for breakfast. They were such a hit!
We all know everything is better with bacon. Whether crispy or chewy, it can be enjoyed on its own, as a Sunday morning side dish, or incorporated into fun new breakfast recipes like this one. We love Smithfield Hometown Original Bacon, it’s known for being smoked and cured to perfection and is available in a wide variety of flavors and cuts.
We don’t have to spend hours cooking to have a healthy wholesome start to the day. I wanted to think outside the box of breakfast with my Breakfast Nachos and thanks to Smithfield bacon they were gobbled down by my family.
I first started off by cooking my Smithfield Hometown Original Bacon. How do you cook your bacon? I have found that cooking my bacon in the oven is so easy and I love the way my bacon turns out. I bake is at 400 degrees for about 15-20 minutes deepening on how crispy you want it.
I always enjoy a good plate of nachos. And I love tater tots, eggs, bacon, and cheese so I threw them all together. I added a little kick with some sriracha sauce, some sour cream to make it creamy and topped it with green onions and jalapeños. Bam, Loaded Bacon and Tater Tot Breakfast Nachos. - 1/2 lb Smithfield bacon cooked and crumbled
- 6-7 C tater tots cooked
- 6 eggs, scrambled
- 1/2 C Cheddar Cheese
- 1/2 tsp seasoning salt
- 1 tsp siracha sauce
- 1 jalapeños sliced
- 1/4 C sour cream
- 1 green onion chopped

Cook your bacon, crumble it and set it aside.

Bake your tater tots on a greased baking sheet according to the instructions on the package.

When tater tots are almost done cooking, make your scrambled eggs.

Once tater tots are done, sprinkle seasoning salt on top. Add your eggs, crumbled bacon and sprinkle your cheese on top.

Take sriracha sauce and drizzle it over your nachos. Top with sour cream, green onions, and jalapeños.
