Pulled Pork Baked Potato

BBQ Pulled Pork Baked Potato

I love anything that has do with pulled pork. These pulled pork baked potatoes are a staple in our family that we always look forward to eating all the time. One of the reasons I love making pulled pork is because it’s so versatile. 

We always tend to eat this meal more during summertime. Living in Vegas during summer makes using your crock pot a must! Pulled pork baked potatoes are great for entertaining at any get together or party. 

BBQ Pulled Pork Baked Potato

I first start off by trimming the excess fat off of the pork loin. Some people like keeping the fat on because they think thats the best part, so its up to you. Then I mix together garlic salt and onion powder in a bowl and rub it on the pork loin. I place it in the crockpot and pour Dr.Pepper over the top of your meat. 

I cook it on low for about 8-10 hour or until the meat is basically falling apart. Once cooked, I take about  1/2 c of the liquid in your crockpot and set aside. Drain the rest. I shred the pork loin and place back into crockpot. Then I like to add just a little bit of the Dr.Pepper juice back in. About 1/4 c- 1/2 c to make it little moist. I add BBQ sauce, right now Jack Daniels is my favorite. My rule is that its always good to not over do it on the sauce because people can always add more to their own meat. 

I bake the potatoes in the oven. Once there done I cut right down the middle length ways and stuff my meat in. I add coleslaw to the top, which is make these this meal just so good! Then I drizzle bbq sauce over the top and I like to serve it with a side of corn on the cob.

Ingredients

3-4 lbs Pork Loin

1 tsp garlic salt

1 tsp onion powder

1 12oz can Dr. Pepper

1 bottle of favorite bbq sauce

Large baked potatoes

Favorite kind of coleslaw

Instructions

Trimm excess fat off your pork loin and set aside.

Mix together garlic salt and onion powder in a bowl and rub it on your pork loin. Once done place pork in your crockpot.

Pour Dr.Pepper over the top of your meat, place lid on top.

Cook on low for 8-10 hour or until cooked through and very easy to pull apart.

Once cooked, take about  1/2 c of the liquid in your crockpot and set aside. Drain the rest.

Shred your pork loin and place back into crockpot. Then I like to add just a little bit of the Dr.Pepper juice back in. About 1/4 c- 1/2 c to make it little moist.

Add your BBQ sauce until your liking. My rule is that its always good to not over do it on the sauce because people can always add more.

Bake your potatoes in the oven, once done cut right down the middle lengthwise.

Stuff your meat in and add coleslaw to the top. Drizzle with bbq sauce.
